Recipes
Here are a couple of recipes that I have used and thought I would share I know I'm always looking for new and different things to feed my family (and trust me trying to find something that everyone likes is not an easy task). Right know there is only a couple but I will be updating it now and then when I think of something new, or stumble across something I think you would enjoy. Also if you have any that you would like to share please feel free to do so at the bottom of the page.
I found this super exciting, I am always looking for ways to save recipes and look up more all in the same place. Well I know there are several sites that do this but my favorite so far is this one http://smiley360.ziplist.com/recipes. You can do so many things at smiley360 but I was super stoked about this. There are some great recipes from all over the web here. I think you will love it as much as I do.

Quick and Easy Lasagna Roll-Ups
This is a recipe that I found in an old cook book I have. I made it for my family and they absolutely loved it. It only took me about 15-20 minutes to prep (which if you've ever made lasagna you know that's not to bad) and about forty minutes to cook.
Ingredients
Directions
Ingredients
- 8oz. pkg. lasagna noodles
- 1 pint cream cottage cheese (I used ricotta instead)
- 2 cups shredded mozzarella cheese
- 1 egg beaten
- 1/2 cup chopped parsley (optional)
- pepper to taste
- 3 cups spaghetti sauce (any kind, divided)
Directions
- In a large pot bring 4-5 qts. water to a boil. Cook lasagna noodles for 10 minutes, uncovered (mine were the pre-cooked kind so I only cooked them about 5 minutes, until they were soft enough to work with) Rinse cooked noodles in cool water. Drain.
- In a mixing bowl, combine cottage cheese, egg, parsley if you wish, and pepper.
- Pour 1 cup spaghetti sauce in bottom of a greased 9x13 baking dish.
- Spread 1/4-1/3 cup cheese mixture on each lasagna noodle and roll up jelly-roll fashion. Place seam-side down in the sauce.
- Cover with remaining sauce. Cover dish with aluminum foil.
- Bake at 350 degrees for 35-40 minutes until hot and bubbly.
- Let stand about 10 minutes.
Cake Balls
Ok so if you have not tried these yet they are a MUST. They are so good I love them. The only down fall with these is if your not use to dipping chocolate. It will frustrate you to no end the first time. It did me there was alot of I will never do this again during the dipping of these lol. Although, when they were ready to eat they were sooo good I forgot all about my earlier frustration. So here is a recipe for them I got this recipe from
http://allrecipes.com.
Ingredients
Directions
Ingredients
- 1 (18.25 ounce) package chocolate cake mix (or any flavor that you would like to use I have tasted the strawberry, which was amazing, and I personally used the confetti cake mix.)
- 1 (16 ounce) container prepared chocolate frosting (again any flavor frosting you want to use.)
- 1 (3 ounce) bar chocolate flavored confectioners coating (I used Almond bark, and there are also the melting chips. Again any flavor you want on this as well)
Directions
- Prepare the cake mix according to package directions using any of the recommended pan sizes. When cake is done, crumble while warm into a large bowl, and stir in the frosting until well blended. (I used the whole container of frosting which made is very moist and gooey and I put the mix in the fridge for an hour to make it easier to scoop. If you don't want it as gooey you should use less frosting in the mix.)
- Melt chocolate coating in a glass bowl in the microwave, or in a metal bowl over a pan of simmering water, stirring occasionally until smooth. (for first time chocolate dippers the chocolate has to get really really hot and smooth before you can dip, otherwise it ends up all chunky and a mess.)
- Use a melon baller or small scoop to form balls of the chocolate cake mixture. Dip the balls in chocolate using a toothpick or fork to hold them. Place on waxed paper to set. (I found that it is best to leave them to sit out on the counter at room temp.)
